1. Dry Yeast. 1 tablespoon of dry yeast equals 9 grams.

I prefer using Lowan Dried Instant Yeast, but any active dry yeast will work. If using yeast packets, 2 x 7g sachets can be used instead. Make sure the yeast becomes frothy when activated; otherwise, it may not be active.

2. Liquid Temperature.  using scalding hot milk and water, as it can kill the yeast.
Aim for warm temperatures - milk heated for 45 seconds in the microwave and warm tap water work well.

3. Flour. Bread flour yields fluffier rolls, but all-purpose flour can also be used. Adjust flour measurements based on your location's cup size or use a kitchen scale.

4. Proofing Dough.  a warm environment, try proofing the dough in a dryer for quicker rises, especially during colder weather.

5. Sweetness.
The recipe calls for a touch of sweetness with 1/4 cup of sugar. Adjust according to preference; reducing it to 2 tablespoons is an option.

6a. Make Ahead.  dough can be refrigerated for 4 to 24 hours after shaping into balls for a slower rise.

6b. Storing.  Enjoy the rolls fresh, but if storing, reheat briefly in the microwave to maintain softness. Rolls can also be frozen, then reheated or toasted.
